I love kale. It’s borderline weird, but really healthy, so…let’s let the obsession slide. Happy to see that it’s becoming more popular. And in doing so, some interesting tidbits have surfaced, like this:
Kale contains 45 different flavonoids with a variety of antioxidant and anti-inflammatory effects.
It “revs up your body’s natural detoxification ability.”
It “has the broadest range of antioxidants and also the highest levels of several specific ones, along with Vitamin K and a type of Vitamin E.”
Eat up. Just don’t saute, says The Washington Post.
